Pan fried smoked salmon with niçoise salad and tomato pesto. Coarse game and herb terrine with plum chutney and poilâne bread. Chicken and chorizo risotto with Parmesan shavings and wild roquette. Crayfish and bacon salad with garlic croutons and aioli. Char grilled Mediterranean vegetable and goats cheese salad with basil pesto. To Follow Pleurotte mushroom and tarragon risotto with Parmesan shavings and wild roquette. Pan fried pavé of salmon with scallion mash, smoked bacon, button mushrooms and tomato beurre blanc. Char grilled 6oz rib eye steak with garlc butter, grill garnish and French fries. Blanquette of lamb with garlic mash, and green beans. Traditional roast turkey with all the trimmings. To Start Mosaic of Game with quince jelly, truffled celeriac and toasted brioche. Seared King Scallops with herb, crayfish and chorizo salad, garlic aioli . Feuilleté of quail and cep mushroom with a cassoulet of pulses, Madeira jus and pea purée. Goats Cheese and Mediterranean Vegetable Terrine with beetroot jelly, basil pesto, melba toast and wild roquette. To Follow Seared Fillet of Sea Bass with scallion mash, wild mushrooms, baby carrots and vanilla cream. Baked loin of venison wrapped in tarragon mousse, herb pancakes and walnut jus.
